Ingredients:
1 pound large shrimp, peeled and deveined
8 ounces pasta (spaghetti, linguine, or angel hair work great)
3 tablespoons olive oil
4 garlic cloves, minced1/4 teaspoon red pepper flakes (adjust to taste)
Zest and juice of 1 large lemon
1/2 cup dry white wine (optional)
1/2 cup chicken or vegetable broth
1/4 cup freshly chopped parsleySalt and freshly ground black pepper, to taste
Grated Parmesan cheese, for serving
Instructions:
Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water, and set aside.Sauté the Shrimp: While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet in a single layer. Cook for 1-2 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.Make the Sauce: In the same skillet, add the remaining olive oil, minced garlic, and red pepper flakes. Sauté for about 1 minute until the garlic is fragrant but not browned. If using, pour in the white wine and let it simmer until reduced by half, about 2 minutes. Stir in the lemon zest, lemon juice, and broth, bringing the sauce to a simmer.Combine Pasta and Shrimp: Return the cooked shrimp to the skillet with the sauce. Add the cooked pasta and toss to combine, adding a little reserved pasta water if needed to loosen the sauce. Cook together for 1-2 minutes until everything is heated through and the pasta is well coated in the sauce.Serve: Remove from heat and stir in the chopped parsley. Season with additional salt and pepper to taste. Serve immediately, garnished with grated Parmesan cheese and extra lemon wedges on the side.
