- 1/2 teaspoon smoked paprika

- Optional: Crushed red pepper flakes for heat
- Fresh basil or parsley, for garnish
- Grated Parmesan cheese or nutritional yeast for a vegan option, for serving
Instructions:
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving some pasta water for the sauce.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the chopped roasted red peppers to the skillet and cook for an additional 2-3 minutes.
- Transfer the garlic and red peppers to a blender, adding the heavy cream (or coconut milk), smoked paprika, salt, and black pepper. Blend until smooth. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
- Return the sauce to the skillet and heat over low heat. Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce. If desired, add crushed red pepper flakes for a spicy kick.
- Serve the pasta hot, garnished with fresh basil or parsley and a sprinkle of grated Parmesan cheese (or nutritional yeast).
