Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced (any color)
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- For the Dressing:
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions:
- In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and the quinoa is tender. Fluff with a fork and let cool.
- In a large bowl, combine the cooled quinoa, diced cucumber, bell pepper, red onion, cherry tomatoes, Kalamata olives, crumbled feta, and chopped parsley.
- To make the dressing, whisk together the extra virgin olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a small bowl until well combined.
- Pour the dressing over the salad and toss gently to ensure everything is evenly coated.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
