Matcha Mochi

Instructions:

1. In a medium bowl, whisk together sweet rice flour, sugar, and matcha powder. Gradually add water, stirring until a smooth batter forms.
2. Cover the bowl with plastic wrap, leaving a small vent, and microwave on high for 1 minute. Stir the mixture, then microwave for another minute. Stir again until the dough becomes thick and sticky.
3. Dust a clean surface with cornstarch or potato starch. Spoon the mochi dough onto the surface and dust the top with more starch to prevent sticking. Allow to cool slightly until manageable.
4. Divide the dough into small portions. Flatten each piece into a circle, place a small amount of red bean paste in the center, then wrap the mochi dough around the filling, sealing it completely. Roll it into a ball shape, dusting with more starch to prevent sticking.
5. Repeat the process with the remaining dough and filling.
6. Place the completed Matcha Mochi on a plate, dusting off any excess starch.
