- 2 tablespoons granulated sugar
- 1 tablespoon water
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and cool slightly.
- In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add eggs, one at a time, mixing well after each addition. Blend in the lemon juice, vanilla extract, and lemon zest. Gently fold in 1 cup of blueberries.

- To make the blueberry swirl, combine 1 cup blueberries, 2 tablespoons sugar, and water in a small saucepan over medium heat. Use a knife or skewer to swirl the blueberry mixture into the cheesecake.
- Bake for 35-40 minutes, or until the cheesecake is set but still slightly jiggly in the center. Cool to room temperature, then chill in the refrigerator for at least 3 hours before slicing into bars.
