Ingredients:
- 4 cups whole milk
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- 1/4 cup chopped pistachios or almonds
- 1/2 cup heavy cream (optional, for a richer texture)
- A pinch of saffron strands (optional, for color and flavor)
Instructions:
- In a large, heavy-bottomed saucepan, bring the milk to a boil over medium heat. Once boiling, reduce the heat to low and simmer, stirring frequently, until the milk is reduced by half, about 1-2 hours. The milk should thicken and become creamy.
- Add the sugar, ground cardamom, and saffron (if using). Cook for another 10-15 minutes, stirring continuously until the sugar is fully dissolved and the mixture is thick.
- Remove from heat and allow the mixture to cool. Stir in the heavy cream (if using) to add richness.
- Mix in the chopped pistachios or almonds, reserving some for garnish.
- Pour the mixture into molds or small cups. Cover with plastic wrap and freeze for at least 6-8 hours, or until completely set.
- Before serving, dip the molds briefly in warm water to help release the Kulfi. Invert onto serving dishes and garnish with the reserved nuts.
