Classic Tiramisu

Ingredients:

• 6 egg yolks
• 3/4 cup granulated sugar
• 1 cup mascarpone cheese
• 1 1/2 cups heavy whipping cream
• 2 cups strong brewed espresso, cooled
• 1/2 cup coffee liqueur (optional)
• 1 package (about 24) ladyfingers
• Unsweetened cocoa powder, for dusting
• Dark chocolate shavings, for garnish (optional)

Instructions:

1. In a large bowl, whisk egg yolks and granulated sugar together until pale and thick. Add the mascarpone cheese and mix until smooth and well combined.
2. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until just combined.
3. In a shallow dish, combine the cooled espresso and coffee liqueur (if using). Briefly dip each ladyfinger into the espresso mixture, making sure not to soak them.
4. Arrange a layer of dipped ladyfingers at the bottom of a 9x13 inch dish or a large serving dish. Spread half of the mascarpone mixture over the ladyfingers.
5. Add another layer of dipped ladyfingers and top with the remaining mascarpone mixture. Smooth the top with a spatula or the back of a spoon.
6. Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
7. Before serving, dust the top of the tiramisu with unsweetened cocoa powder and garnish with dark chocolate shavings, if desired.
