Ingredients:
- 4 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 tablespoon all-purpose flour
- 6 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 bay leaf
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 1 baguette, sliced and toasted
- 1 cup grated Gruyère cheese
Instructions:
- In a large pot, melt the butter with olive oil over medium heat. Add the onions and sugar, cooking until the onions are deeply caramelized and golden brown, about 30-40 minutes, stirring occasionally.
- Sprinkle the flour over the caramelized onions and cook for another 2 minutes, stirring constantly.
- Add the beef broth, white wine (if using), bay leaf, and thyme to the pot. Season with salt and pepper. Bring the mixture to a simmer, then reduce the heat to low and cook for 30 minutes.
- Preheat the broiler. Place the toasted baguette slices on a baking sheet and sprinkle generously with grated Gruyère cheese. Broil until the cheese is melted and bubbly.
- To serve, ladle the soup into bowls and top each with a cheesy baguette slice.
