Balsamic Glazed Steak Rolls

Ingredients:
- 8 thin slices of flank or sirloin steak
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil, divided
- 1 red bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 carrot, thinly sliced
- 1/2 onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- Fresh herbs for garnish (optional)
Instructions:
- Season the steak slices with salt and pepper. Set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sauté the bell pepper, zucchini, carrot, and onion until just tender, about 2-3 minutes. Add the garlic and sauté for another minute. Remove from heat.
- Place a small amount of the vegetable mixture on each steak slice. Roll up the steak tightly around the filling and secure with a toothpick.
- In the same skillet, heat the remaining olive oil. Add the steak rolls and cook on all sides until browned, about 2 minutes per side.
- Remove the steak rolls from the skillet and set aside. Add the balsamic vinegar and brown sugar to the skillet. Bring to a simmer and cook until the glaze has thickened, about 5 minutes.
- Return the steak rolls to the skillet and coat them with the glaze. Cook for an additional 1-2 minutes, or until the steak is cooked to your desired doneness.
- Remove the toothpicks, garnish with fresh herbs if desired, and serve the steak rolls drizzled with the remaining balsamic glaze.
